More info : This delicious red is produced from Cabernet Franc grapes grown on the Eastern slopes of the Franschhoek Mountains. The grapes are selected from two distinct plots, hand harvested, hand sorted to ensure only the best grapes are used, and allowed to ferment spontaneously with natural yeasts. Ageing takes place in small French barriques for 18 months. The resulting wine is complex, deeply flavoured and is a delicious New World twist on what can sometimes be a bit of an austere grape variety.
Winery : Chamonix's history dates back to 1688, when it formed part of the French Huguenot la Cotte estate. The estate now comprises 50 hectares, part of which is located on some of the highest altitude vineyard sites in the country. Now under the ownership of German-born entrepreneur, Chris Hellinger, the estate has developed and expanded and follows a philosophy of minimal intervention. Only organic compost and mulch are used in the vineyards, as well as green pruning (removal of some bunches before ripening) to keep the yields down and protect the environment. These natural methods result in wines which have fantastic character, concentration and style.
