Tasting Note : Deep blackcurrant fruit on both the nose and palate; excellent concentration, some structure and a hint of spice.

Food Pairing : Pair with beef burgers, vegetarian Chile or char-grilled lamb chops. A perfect mid-week red.

More info : Cabernet Sauvignon tends to be overshadowed at the moment by more popular red varietals such as Merlot and Malbec. However, it is not the main grape variety in some of the world's finest wines for no reason! This thick-skinned little grape produces dark coloured, often quite tannic, deeply concentrated wines which are the backbone to some of the top wines of Bordeaux. The warm climate in Chile helps this late-ripener perform at its best, and it is possible to find very classy Cabernets at surprisingly low price points. This wine is great value for money, and while you might not get the complexity of the great Cabernets it delivers great flavour and balance.

Del Pedregal Winery : Established in 1825, and still family-owned, the latest generation are continuing to focus on vineyard acquisition and investment in the winery. Recent developments mean that the winery can now bottle 5,000 bottles per hour, and the sophisticated new filtration system guarantees consistency of quality.

The family are committed to sustainable viticulture and production, and have recently invested thousands in a waste liquid disposal system which is environmentally friendly.
