Vineyard and Viticulture:

Located in Uclés, the most Northern and one of the highest areas of Castile, at altitude between 700 and 900m. The estate is managed as an integrated ecosystem and advanced precision viticulture uses drip irrigation as a quality factor, allowing fine tuning of vigour and yields. The growing conditions are ideal to produce wines of great purity, freshness and varietal expressiveness.



The Oveja Series is a dynamic range of limited releases. Under these labels the winery bottles single fermentation tanks that are the result of their work and experiments in the vineyard. The varieties and quantities bottled will vary from year to year. 


Fermented using cultured yeast, in stainless steel tanks at around 14-16°C for 8-10 days. The wine remains on fine lees for a minimum of three months. No malolactic fermentation in order to retain the fresh, pure varietal character of the grapes.


Tasting Notes:

Intensely aromatic and expressive with aromas of lychee, grapefruit and rose petals. Light-bodied and fresh wine with intense fruit and crisp acidity.


Serving Suggestion:

A great aperitif ideal with fish dishes or salads.
