Vineyard and Viticulture:

Grapes were hand-harvested from the end of September up to the middle of October 2011 from a number of different vineyards across the regions of Alta, Baja and Alavesa. Vineyards lay on East, South-East and SouthWest facing slopes. The soils are stony with layers of calcium-clay and limestone and lie at an altitude of 345 to 570 metres. The vines are 27 to 90 years old and are trained on a trellis and goblet system which are the most suitable for the region. The planting density is 3000 vines per hectare, producing low yields of 35 hl/ha



Grapes were de-stemmed and manually sorted at the vineyard. A pneumatic horizontal press was used to release the juice and prefermentation maceration lasted for 2 days at 16 °C. Fermentation was started with wild yeast in stainless steel tanks and lasted for 9 days at 25°C. The wine was then matured for 20 months in 80% old French and American oaks and 20% were new barrels. The wine was also left on its lees for 3 months, followed by malolactic fermentation. The wine was fined, filtered and matured in bottle for 12 months before release. Total production: 89, 488 bottles of 750 ml.


Tasting Notes:

Aromas of ripe cherries and blackcurrant with slight undertones of liquorice and spices. Well-structured and round on the palate with polished tannins. Long finish with hints of ripe red fruit and toffee.
