Vineyard and Viticulture:
Grapes are sourced from two sites facing East to West to maximize sun exposure. Situated on slopes 155 meters above sea level, the 15 year old vines are trained on a vertical shoot positioning system. Planted on the unique ‘Koffieklip’ soil that is iron rich, with good water retention but poor drainage. Drip irrigation is used in the vineyards. The grapes were hand picked early morning.
Bunches were de-stemmed, sorted and pressed. Fermented in stainless steel tanks for 20-30 days between 25-30°C. During fermentation, the wine was racked into 500 litre oak barrels. This was followed by 18 months maturation in a combination of old and new Burgundian oak barrels (300 litres), of which 60% were 2nd and 4th fills.
Aromas of ripe red and black fruit and hint of tobacco and spice. The palate shows sophisticated oak integration and lively acidity with firm tannins.
Finest roast, grilled meat, lamb, mature cheese or gently spiced dishes.
