Vineyard and Viticulture:

Vineyards are located in the sub-region of Gualtallary in Tupungato, Uco Valley. Vineyards are at 1320 metres above sea level and due to the very low rainfall, drip-fed irrigation is used when necessary. Soils are predominately calcareous which provide good water retention and drainage. The vines are on average 8 years old with yields of 49 hl/ha. 



Grapes were manually sorted in the vineyard and de-stemmed prior to pre-fermentation maceration for 4 days. A pneumatic press was used to gently extract the juice. Wild yeast was used for fermentation which lasted for 15 days between 24-27°C in cement tanks. Post-fermentation maceration was carried out for 7 days at 22°C to extract colour and tannins. The wine matured for 6 months in cement tanks and rested on its lees for 2 months whilst malolactic fermentation occurred. It was matured in bottle for 2 months prior to release. 


Tasting Notes:

Mineral aromas on the palate are coupled with notes of violets, soft red berries & chalky undertones which continue onto the palate. Very complex and fresh with a very long finish.
