Vineyard and Viticulture: 

Vineyards are located in the Gualtallary sub-region of Tupungato in the Uco Valley at a high altitude (1320 metres above sea level), where there is a wide diurnal range with temperatures fluctuating between 17 to 35°C. The average age of vines is 7 years with yields of 42 hl/ha. Soils are predominately calcareous and due to steep slopes and low rainfall, drip-fed irrigation is used when necessary. 



Harvesting is carried out by hand using 16kg crates. Grapes are left in contact with their skins for 7 days at cool temperatures in order to add complexity. Wild yeasts were used for fermentation which took place for approximately 25 days at a controlled temperature of 810°C. The wine is left in contact with the lees for 3 months with daily battonage and matured for 3 months in bottle prior to release. 


Tasting Notes:

Complex nose with citrus fruit aromas with notes of apple, wet stone and herbs. Great acidity on the palate with hints of lemon, lime, green apple and a long finish. 


Serving Suggestion:

White fish, asparagus risotto or light chicken dishes.
