Tasting Note : Ripely fruity on the nose with hints of stone fruits. Rich and rounded on the palate, with full, mineral flavours and a firm thread of acidity running throughout. The finish is long and dry.
Food Pairing : Grilled white fish, langoustines, creamy mushroom pasta. Or just a glass on its own with a bowl of cashew nuts.
More info : Chablis is undeniably one of France’s classic whites. This relatively small region in the North of France produces exclusively white wines from the Chardonnay grape. The vines are planted on the rolling hills around the picturesque town of Chablis, and the vineyards are graded from Petit Chablis through to Grand Cru according to the quality of the subsoil and aspect of the slope.
Although sometimes the wines from the top two categories can be aged in oak, straight Chablis is almost always fermented and aged in stainless steel tanks, giving it a clarity and purity of style which is hugely appealing. The stoney, mineral character of the special soil of the area seems to permeate the wine, and Alain Geoffroy manages to get the balance of his wines just right – fresh and steely, but with an underlying richness. With all the fuss and excitement surrounding New World wines sometimes the old classics can be forgotten. This wine is definitely worth re-visiting.
The Winery : The Geoffroy family have been growing vines on their estate since 1850, owning around 45 hectares of vineyard on some of the best Kimmeridgian clay sites. Currently Alain Geoffroy, aided by daughters Cathy and Nathalie, oversees the viticulture and vinification of the wines, using modern pneumatic presses and stainless steel tanks to get the best from his grapes. Ageing on lees for several months after fermentation allows the flavours to develop naturally before bottling and storage in their air-conditioned warehouse.
The main drive and philosophy of the Geoffroy house is to allow the character of the terroir to come through in their wines. It really is all about the soil!
