Stylish, modern Sauvignon/Semillon blend – aromatic, with gooseberry and citrus characters. The fuller Semillon rounds out the zesty Sauvignon giving weight and depth to the wine.
Tasting Note : Lots of up-front aromas of gooseberry and green apple on the nose. On the palate the zippy, fruity, lime and gooseberry Sauvignon flavours are lent weight and complexity by the richer Semillon. Very well balanced, a delight to drink!
Food Pairing : Great with fishcakes or fish pie; quiche and salad; battered haddock with hand-cut chips.
More info : Sauvignon and Semillon are the classic blend for white wines in Bordeaux. This wine is produced on the Chateau des Eyssards estate in Bergerac, inland from Bordeaux and on the edge of the picturesque Dordogne. The vineyards are still managed in a traditional way, with close planting to stress the vines; this produces low yields and fruit which is high in intensity and flavour. The vinification process is modern, carried out at cool, controlled temperatures in stainless steel tanks. Bottling is straight from tank, with no oak ageing.
Winery : Chateau Billot is produced on a stunning 40-hectare estate in the beautiful countryside around the town of Bergerac. Owner Pascale Cuisset is acknowledged as one of the best up-and-coming winemakers of the area. He believes that whilst technology is important, the skill of the winemaker is paramount in producing wines that stand out from the rest. He successfully combines tradition with modern techniques to produce wines with real character and heritage that appeal to today’s wine drinkers.
