Description
Our partner, The Hampshire Salami Co’ is an artisan maker of Salumi, the Italian collective for salami and cured meats. They use fresh local ingredients from as close to Hampshire Salami Co’ HQ as possible: local producers, farmers and small holders in and around the Hampshire area that are rearing exceptional livestock.
All the products are produced using Italian recipes, which in true style have been developed over many hundreds of years, as well as being passed down from family generation to family generation.
They only use prime cuts of meat, predominantly pork and in true artisan fashion, they “Cure one pig at a time, from nose to tail”. They offer other meats including beef, lamb, goat, venison, and game when it is in season.
Barry Walker the ‘Chief Salami Wrangler’, travels extensively in Italy seeking and sourcing new recipes and then replicates them back in Hampshire.
This pack of Salami may contain a different selection every time, depending on availability. There is approx 100g of salami on each pack. Some examples are:
Farmhouse
Traditional salami simply flavoured with black and white pepper.
To accompany the Vermentino.
Finocchiona
Pork flavoured with salt, black pepper, crushed fennel seeds and green peppercorns to give a pungent aromatic flavour.
An ideal partner for Chianti Classico.
Hampshire Black
A full-flavoured salami with chilli, paprika and cayenne pepper all adding to the complex taste.
This will pair beautifully with the Moro Rosso we will be tasting.
