Description
This Chardonnay based Cremant de Limoux is made using the ‘methode traditionnelle’. (ie just like Champagne). The first fermentation is in stainless steel vats to control the temperature with the secondary fermentation in bottle. The wine is then allowed to rest on lees for a minimum of twelve months before disgorgement, with a further fifteen months in bottle before release.
60% Chardonnay, 30% Chenin Blanc and 10% Mauzac, this is fresh, lively but has gentle acidity and a wonderfully fresh mousse.
J Laurens produce this Chardonnay-based Cremant de Limoux from their organically-farmed vineyards slightly south-west of Carcassone, in the Languedoc region . The domaine was established by a Champagne producer in the 1980s and is today owned by Jacques Calvel, who surrounded by an expert local team, has built the domaine’s current reputation for outstanding sparkling wines.
